Simple Tomato Bread

A simple, nourishing tomato bread snack made with rustic bread and inspired by seasonal living — perfect in summer to elevate any dish.

Ingredients
4 slices sourdough bread
4 ripe beef tomatoes (the better the quality, the tastier)
2 garlic cloves, crushed
3–4 tbsp olive oil
Sea salt, to taste
Freshly ground black pepper (optional)
Method
Drizzle a little olive oil onto each slice of sourdough.
Toast the bread slices in a frying pan until golden and crisp on both sides.
Meanwhile, grate the tomatoes using a coarse grater into a bowl.
Strain the tomato pulp, separating the juice into another bowl (save the juice and skins for another use, like soups or dressings).
Season the grated tomato pulp with sea salt.
Rub the toasted sourdough on both sides with the crushed garlic.
Spoon a generous amount of the seasoned tomato pulp onto each slice.
Drizzle with more olive oil, add a little black pepper if you like, and serve immediately.
Serving & Storage
Best enjoyed fresh and warm
Not suitable for storage, as the toast will soften
Leftover tomato juice can be refrigerated for up to 2 days and used in soups, dressings, or sauces
