Almond Protein Bites, Ella's Plantas

These Almond Protein Bites are a naturally sweet, energy-boosting snack made with wholesome ingredients, perfect for a midday pick-me-up or a post-garden treat.


Ingredients

  • 15 medjool dates, pitted and roughly chopped

  • 1 cup desiccated coconut

  • ½ cup oat flour

  • ½ cup cocoa powder (plus extra for dusting)

  • 3 tbsp almond butter

  • 8–10 whole almonds

  • Pinch of sea salt

  • 3 tbsp water (for soaking)


Ingredients

  1. Soak the dates in 3 tablespoons of water for 2 minutes to soften.

  2. Blend the soaked dates (with the water) and the desiccated coconut in a food processor until a sticky mixture forms. Add a splash more water if needed.

  3. In a large bowl, combine the oat flour, cocoa powder, almond butter, and sea salt. Stir in the blended date-coconut mixture and mix until fully combined.

  4. Roll the mixture into 8–10 small balls using your hands. The mixture should be sticky but firm. (If it’s too wet, add a little more oat flour.)

  5. Chill the bites on a plate in the fridge for at least 1 hour to firm up.

  6. Dust a plate with cocoa powder, then roll each bite in the powder to coat.

  7. Finish by gently pressing one whole almond into the centre of each bite.


Enjoy these Almond Protein Bites chilled or at room temperature. Best kept in the fridge and enjoyed within 5–7 days.
